Chicken "Pesto" Bowl

This delicious dish is a heart healthy, blood sugar friendly and protein packed way to enjoy the tastes of the Mediterranean without all of the fat and carbohydrates that usually come with pesto based dishes. Instead of adding a large amount of oil and cheese to basil to make traditional pesto, we have simply blended some basil leaves with seasoning and lemon juice, and then added in a little bit of antioxidant rich olive oil.
