It is no question that vegetables are great for your health, but sometimes it can be difficult to incorporate enough vegetables into your everyday life. This veggie omelet recipe will show you just how simple and delicious it can be to get an extra serving of vegetables into your day.
Ingredients: 4 egg whites,1/4 cup water,1/4 teaspoon cream of tartar, 2 eggs,1/4 teaspoon salt, 1 teaspoon coconut oil (or organic butter), 1 medium chopped tomato, 1 small chopped zucchini, 1 small chopped onion, 1/4 cup chopped green pepper, 1/2 teaspoon seasoning of choice 1/4 cup shredded reduced-fat cheddar cheese (optional)
1. In a bowl, beat egg whites, water and cream of tartar together. Then, in a different bowl, beat eggs and salt until mixture thickens, and then fold in the egg mixture into the egg and salt mixture.
2. Grease cooking pan with coconut oil and set over medium heat. Pour eggs into pan and cook for about 5 minutes, or until puffy and lightly browned. At the same time, in a small skillet, sauté vegetable mixture until vegetables are tender and cooked.
3. Once vegetables are cooked, pour vegetable mixture onto one half of the omelet, add cheese if desired, and then fold omelet over. Allow omelet to cook before serving. Add salt and pepper if desired.
