These paleo approved low sugar, grain free pancakes are sure to satisfy any sweet-tooth without threatening to ruin any nutrition goals. They are perfect for Saturday mornings, or for dessert any day of the week!
1/2 cup Birch Benders paleo pancake mix
1 cup cage free egg whites
2 medium sized bananas
1/3 TSP Ceylon cinnamon
1/2 TBS coconut oil
1/2 cup frozen organic berries
Natural almond butter
Dairy-free chocolate chips (optional)
1. In a bowl, mash 1 1/2 bananas, then combine with paleo pancake mix and egg whites. Stir until smooth.
2. Heat skillet to medium heat, add coconut oil to prevent pancakes from sticking, and pour batter onto skillet.
3. Flip each pancake, remove from heat, and repeat until all batter has been used.
4. Stack pancakes on top of one another, and garnish with berries, remaining banana, cinnamon, almond butter, and if desired, chocolate chips. Enjoy!
